Process almonds in food processor till finely chopped. Beat egg whites until stiff but not dry. Gradually add sugar; continue beating until mixture is completely blended, about 5 minutes. Stir in lemon zest, almond extract, and almonds. Drop by teaspoon onto well-greased and floured baking sheet. Bake at 275° for 30 minutes. Turn oven off, but leave cookies in oven at least 1/2 hour, or overnight.
Editor’s Extra: Blanched, in reference to almonds, means skinned—the almonds have been briefly put in boiling water so that their skins come off.
