Butter a 3-foot strip of wax paper. In a large saucepan, cook sugars, water, and butter over high heat. When mixture begins to boil rapidly, add pecans. Boil, stirring constantly, until mixture forms large bubbles on top and looks sugary, 3–4 minutes. Remove from heat; drop quickly by spoonfuls onto prepared wax paper.
Editor’s Extra: Pralines should be spooned onto wax paper quickly when near soft-ball stage . . . too soon and they won’t set . . . too late and they sugar. But you can always put them back in the pot to cook a minute longer, or to “unsugar” by adding a tablespoon of water. Once you get the feel of it, you’ll know when it’s time.
