1. Cut pork in slices 2 inches thick, then in strips 6 inches long and 2 inches wide.
2. Place in a heavy pan with soy sauce and water. Bring to a boil, then simmer, covered, 1 hour. Serve hot or cold.
VARIATIONS:
* In step 2, add any or all of the following:
1 piece dried tangerine peel (soaked)
1 scallion stalk cut in 1-inch sections
1 slice ginger root
1 or 2 garlic cloves, crushed
2 cloves star anise
1/2 stick cinnamon
1 teaspoon salt
1 tablespoon sugar
1/2 cup sherry
