1. Prepare any of the marinades for roast pork (search for "Category: Pork Marinades"). Add to pork and let stand 2 hours, turning meat frequently. Drain, discarding marinade.
2. Preheat the oven to 425 degrees. Place pork on a rack over a drip pan. (Line pan with foil for easier cleaning.) Add several inches of water to keep drippings from burning. Roast pork 10 to 15 minutes to sear.
3. Reduce heat to 350 degrees. Roast pork until done (allow about 30 minutes per pound). Baste several times with drippings. Turn meat at half-hour intervals for even roasting.
4. Let cool slightly, then cut in 1-inch cubes, or slice thin and cut in strips 1 inch wide and 2 1/2 inches long. Serve hot or cold.
