1. Slice pork thin against the grain. Add soy sauce to pork and toss. Slice cucumbers thin, but do not peel.
2. Heat oil. Add pork and stir-fry until it begins to brown (about 3 minutes).
3. Add cucumbers and salt stir-fry 1 to 2 minutes. Then cook, covered, over medium heat until done (about 1 to 2 minutes more). Sprinkle with sesame oil and serve at once.
VARIATION:
* Use 1 cucumber and 1/2 cup bamboo shoots, sliced thin. Add as in step 3.
