Cheddar Cheese Pastry:
Process flour, salt, and shortening in a food processor until crumbly. Add cold water in a fine stream, processing constantly. Add Cheddar cheese, processing constantly to form a ball. Chill, covered, for up to 2 days. Yields enough for 2 pastries.
Filling:
Beat sugar, butter, and eggs in mixer bowl until blended. Beat in cinnamon and vanilla. Stir in apples. Divide pastry into 2 equal portions. Roll one portion into an 11-inch circle on a lightly floured surface. Fit into a 9-inch pie plate sprayed with nonstick cooking spray. Fill with apple filling. Roll remaining pastry into a circle on a lightly floured surface. Cut into strips. Layer over top of pie to form a lattice. Trim and flute edges. Bake at 425° for 10 minutes. Reduce oven temperature to 350°. Bake until pastry is golden brown and pie filling is set.
