Heat cherries and sugar till juice thickens slightly; cool; add brandy. Saturate sugar cubes with lemon or orange extract. Place ice cream in parfait glasses; pour some of syrup from cherries over ice cream. Place 4 or 5 cherries on top of ice cream; place sugar cube on a mound of ice cream among but not touching cherries. Hold tip of lighted match to cube to light just before serving.
