* "When you have to cook supper for the family, this is a good choice." 1. Place in a 2-quart microwavable casserole 1 pound lean ground beef. Lay a piece of waxed paper over the top. 2. Microwave at 100% power (700 watts) for 3 minutes. Stir and break up meat. Place waxed paper on top again. Microwave at 100% power 2 1/2 minutes longer or until meat is no longer pink. Drain off all liquid. 3. Drain and add to meat, 1 can (15 1/2 oz.) red kidney beans, 1 can (12 oz.) whole kernel corn, and 1 can (2.25 oz.) sliced ripe olives. 4. Add 1 can (8 oz.) tomato sauce, 1 teaspoon onion salt, and 1/2 teaspoon chili powder. Stir until blended. 5. With a clean spoon, taste a small amount. If you want more chili flavor, add chili powder (up to 1/2 teaspoon).
Place waxed paper on top again.
6. Microwave at 100% power for 4 1/2 minutes. Stir.
Sprinkle with 1 cup shredded Cheddar cheese.
7. Microwave, uncovered, at 100% power for 1 1/2 minutes.
8. Casserole Will Be Hot. Use hot pads and place directly on a wooden board or heatproof surface. Cover casserole with foil and wait for 10 minutes.
9. Remove foil. Sprinkle on top in a circle 1 cup crushed corn chips.
