* Cooking Time: 31 to 34 minutes Power: 100% (700 watts) 50% (350 watts) Squeeze spinach dry. In a medium bowl, beat egg. Add spinach, 1 1/2 cups of the mozzarella cheese, sour cream, 2 tablespoons of the Parmesan cheese, onion, salt and pepper. Stir until blended. Using a table knife, fill each manicotti shell with about 1/4 cup of the mixture, using all of the mixture. Place filled shells in a 12 x 8 x 2-inch microwavable dish.
Pour water over shells. Cover shells with spaghetti sauce, coating well. Cover with plastic wrap, turning one corner back. Microwave at 100% power (700 watts) for 10 minutes, rotating dish one-half turn after 5 minutes. Carefully remove plastic wrap turn shells over* and baste. Re-cover and vent. Microwave at 50% power (350 watts) for 19 to 21 minutes or until very tender, rotating dish one-fourth turn every 7 minutes. Baste with sauce. Sprinkle with remaining 1/2 cup mozzarella cheese and remaining 2 tablespoons Parmesan cheese. Microwave, uncovered, at 100% power for 2 to 3 minutes or until cheese melts. Serve immediately.
* Use two large spoons to turn over manicotti shells.
