* "If an ingredient is optional, that means you can use it or not use it, whichever you prefer. The finished food will be really good either way." 1. Cut off any extra fat from 1 1/4 pounds boneless, skinless chicken breasts. Cut chicken into 1-inch pieces. Place in a 9-inch round microwavable dish that has sides 2 inches high. Sprinkle with 1/4 teaspoon garlic salt and 1/8 teaspoon pepper. Cover dish with plastic wrap, folding one corner of wrap back so steam can escape while cooking. 2. Microwave at 100% power (700 watts) for 2 minutes. Stir. Cover again with plastic wrap, folding one corner of wrap back. Microwave at 100% power 2 minutes longer. Remove from microwave oven. 3. Place dish directly on a wooden board or heatproof surface. Cover with foil and wait for 3 minutes or until chicken pieces are no longer pink in the center.
4. While chicken is cooking, do the following: Place in a sandwich-size plastic bag, 15 buttery round crackers.
Squeeze air out of bag before sealing closed. With your fingers, crush the crackers until they are in small pieces.
Stir in 1/4 teaspoon paprika.
Set aside until later.
5. In a medium bowl, stir with a spoon until blended, 1 can (10 3/4 oz.) condensed cream of chicken soup, 3/4 cup dairy sour cream, 1/2 cup shredded Cheddar cheese, 1 tablespoon lemon juice (optional), and 1/2 teaspoon dried parsley flakes.
Wait until chicken is done.
6. Remove plastic wrap from chicken and stir in soup mixture until soup and juices from chicken are well blended. Sprinkle top with crushed crackers.
If you wish, sprinkle with 2 teaspoons poppy seeds (optional).
7. Microwave, uncovered, at 100% power for 2 minutes. Turn dish one-fourth turn. Microwave at 100% power 2 minutes longer or until very bubbly and hot in the center.
8. Serve over hot cooked rice, noodles or a seasoned rice mix.
