1. Heat oven to 375°. Have baking sheets ready.
2. Mix flour, baking powder, and salt. Beat melted butter, sugar, and brown sugar in a large bowl with electric mixer until fluffy. Beat in peanut butter, eggs, honey, and vanilla. By hand, stir in potato chips, almonds, and coconut. Drop by rounded teaspoonfuls about 2 inches apart onto baking sheets. Bake 10 to 12 minutes until lightly browned. Cool on wire racks.
