1. To make cookies, sift together flour, cinnamon, baking soda, and salt. Beat sugar and butter in a large bowl with electric mixer until fluffy. Beat in molasses and egg. On low speed, gradually beat in flour mixture. Chill 3 hours or overnight.
2. To make filling, cook and stir sugar, eggs, lemon rind, lemon juice, butter, and salt until thick. Remove from heat. Stir in coconut. Cool.
3. Heat oven to 350°. Have baking sheets ready.
4. Divide dough into four equal portions. Roll one portion at a time into a 15 x 2 1/2 -inch strip. Spread one-fourth of the filling on one half of each strip (7 1/2 x 2 1/2 inches), spreading to within 1/4 inch of edges. Fold dough over filling. Seal edges. Cut into 1 1/2 -inch bars. Place on baking sheets. Bake 12 to 15 minutes. Cool on wire racks.
