1. Mix flour, cinnamon, nutmeg, cloves, and salt. Beat sugar and butter in a large bowl with electric mixer until light and fluffy. Beat in eggs, one at a time. Add dates and dissolved baking soda. On low speed, gradually beat in flour mixture. By hand, stir in nuts. Chill several hours until firm.
2. Heat oven to 350°. Grease baking sheets.
3. Form dough into six rolls, about 10 inches long, on a lightly floured surface. Place two rolls 5 inches apart on each prepared baking sheet. Flatten to 1/2 -inch thickness. Sprinkle with sugar. Bake 15 to 18 minutes until golden brown (longer baking time will produce crisper cookies). While hot, cut diagonally into 1-inch slices. Cool on baking sheets 5 minutes. Remove and cool on wire racks.
High Altitude Adjustments: At 6,000 feet, use 3 1/4 cups flour. Bake 10 to 12 minutes.
