Heat oven to 350° F. Sauté mushrooms in 2 tablespoons butter or margarine, stirring, over high heat until lightly browned. Divide among 8 crepes. Lightly sauté ham in same skillet with remaining 1 tablespoon butter or margarine. In bowl mix ham, mayonnaise, sour cream, horseradish, mustard, parsley, and salt and pepper to taste. Place an equal amount on each crepe. Fold crepes and place, seam side down, in greased 11 x 7-inch baking dish. Bake for 20 minutes. Sprinkle with cheese and place under broiler for 1 or 2 minutes until cheese is melted.
