Turkey Curry With Condiments

Ingredients

2 to 3 cups turkeys cooked, cut into 1/2 to 3/4 -inch pieces
1/4 cup sherry or dry vermouth
2 tablespoons butter real
1 onion large, finely chopped
1 apple tart, peeled and diced
1/2 cup celery thinly sliced
1 clove garlic minced
2 tablespoons flour
1 to 3 tablespoon curry powder to taste
2 teaspoons brown sugar
1 1/2 cups turkey broth or chicken broth
Salt and freshly ground pepper to taste
4 cups white rice hot cooked (about 1 1/3 cups raw rice)

Hard-cooked eggs, finely chopped
almonds Toasted slivered
Coarsely chopped peanuts
Toasted coconut shreds
Avocado slices sprinkled with lemon juice
Quartered banana slices sprinkled with lemon juice
Green onions, thinly sliced
Mango or other fruit chutney
Finely chopped tomatoes

Directions:

In small bowl, marinate turkey with sherry or vermouth, turning occasionally, for 1 hour. Heat butter in large heavy skillet. Add onion, apple, celery, and garlic sauté, stirring, for 10 minutes. Add flour and curry powder cook, stirring constantly, for 3 minutes. Stir in brown sugar and broth. Cook 10 minutes, stirring, until thickened. Taste for salt and pepper add turkey and wine mixture and heat through. Serve over cooked rice with a selection of the following condiments:
