Heat oven to 350°F or preheat a Dutch oven. Arrange fish in greased pan or in the Dutch with a coating of oil on the bottom. Add salt, pepper, and onion powder to taste. Spoon soup over fillets and top with spinach. Beat remaining ingredients and pour over spinach. Bake for about 50 minutes. If using a regular oven, bake uncovered.
