Season ribs with seasoned salt and pepper. Rub chopped garlic and jalapeño pepper, if desired, into ribs. Cut ribs into serving-size pieces. layer sliced peppers and onions on top of ribs. Wrap individual servings in heavy-duty foil, and place in refrigerator for up to 48 hours.
When ready to prepare, unwrap ribs and let come to room temperature, about an hour. Rewrap the foil and bake (on cookie sheet to catch drips) in 300° oven for 8 hours.
