Mix flour, salt, and pepper and dredge each piece of meat in this mixture. Melt fat in heavy skillet and brown each piece of meat on both sides. Turn heat low. Cut unpeeled cored apples into quarters and place around the meat. Sprinkle with brown sugar, cover, and simmer 45-60 minutes.
