Cut steak into 1/4-inch strips with the grain. Marinate overnight in mixture of remaining ingredients; drain. Lay flat on trays (cookie sheets). Don’t overlap. Bake at 145° for 6–10 hours. Turn at least once while drying. Ready when it bends like green willow without breaking.
