Pour boiling water over cabbage leaves and let stand about 4 minutes, then drain. Mix well the sausage, rice (or potatoes), and salt. Place meat mixture in equal portions on each cabbage leaf. Roll from stem end, folding in the sides, to wrap meat in leaf. Tie each bundle with string or fasten with toothpicks. Place rolls in kettle and cover with tomato juice, boiling water, and vinegar. Add sugar. Simmer until tender, about 1 hour.
Fun Fact: Artist Grant Wood was born in Anamosa, Iowa. He is best known for his paintings depicting the rural American Midwest, particularly the painting American Gothic, an iconic image of the 20th century. Wood is considered the patron artist of Cedar Rapids, Iowa, and one of his designs is depicted on the 2004 Iowa State Quarter. The Cedar Rapids Museum of Art houses the largest collection of Grant Wood artwork.
