Chill beef. Cut 1 1/2–1 3/4 inches thick. Score both sides in diamond pattern, 1/8 inch deep.
Cook remaining ingredients for marinade slowly for 10 minutes; chill. Place steak in plastic bag, add marinade, press out air, tie securely, and place in pan in refrigerator for 6–8 hours or overnight.
Remove steak from marinade, reserving marinade, and place on grill over ash covered coals or on a rack in broiling pan so surface meat is 4–5 inches from heat. Broil at moderate temperature, rare or medium (25–30 minutes, depending on thickness of steak and doneness desired), brushing with marinade and turning occasionally. Carve in thin slices, diagonally, against the grain.
