Pasties

Ingredients

4 cups all-purpose flour
2 teaspoons salt
1 1/2 cups shortening
10 tablespoons ice water
1 pound lean beef, cut into small cubes
1 pound coarsely ground lean beef
1 pound lean pork, cut into small cubes
5 large potatoes, peeled, chopped
1 1/2 cups small cubes rutabaga
2 large onions, chopped
1 tablespoon salt
1 teaspoon ground pepper

Directions:

Mix flour and salt in large chilled bowl. Cut in shortening with pastry blender until mixture is crumbly. Add ice water all at once. Mix well, adding additional water, if needed, to hold dough together. Divide dough into portions. Combine beef cubes, ground beef, pork, potatoes, rutabaga, onions, salt, and pepper in a bowl and mix well.

Roll each portion of dough into a 1/4-inch thick circle on a lightly floured surface (approximately 8-inch diameter). Place 1 cup mixture in center of each dough circle. Fold up sides of dough to enclose filling, overlapping edges and pressing together to seal. Crimp edge and cut a vent. Place on a baking sheet. Bake at 400° for 45–50 minutes, or until golden brown. Serve with ketchup and dill pickles.

Note: May bake, cool, individually wrap, and freeze. May serve with beef gravy. One Pastie and a salad makes a great meal.

Variation: May add 2 or 3 chopped carrots to meat and vegetable mixture—adds color and flavor.
