Beat egg whites till stiff. Add vanilla, then gradually add confectioners’ sugar, beating until stiff peaks form. Divide ice cream equally among each sponge cake. Cover each one completely with egg white mixture. May be made in advance up to this point and frozen. When ready to serve, place on cookie sheet in 450° oven and quickly brown (takes about 5 minutes).
