Preheat oven to 325°. Heat whipping cream over low heat until hot, not boiling. Beat egg yolks, gradually adding granulated sugar. Remove cream from heat and pour into egg mixture very slowly, stirring constantly to prevent curdling. Add vanilla. Pour into an 8-inch square casserole dish. Place in larger pan of water, and bake uncovered about 45 minutes, or until a knife inserted in center comes out clean. Sprinkle with brown sugar. Place under broiler for about a minute or until sugar caramelizes. Chill several hours before serving.
