Beat together cream cheese, sugar, and lemon juice until creamy; set aside. Using a paring knife, hollow out top of each strawberry, making a shell. Using a pastry bag, fill each just slightly above the tops with cream cheese mixture. Place on cookie sheets. Dip filled strawberries into graham cracker crumbs and place back on cookie sheet. Refrigerate to chill and set. Decorate with mint leaves.
