Combine apple juice and 1/8 teaspoon cinnamon in a small bowl. In another small bowl, combine nuts, brown sugar, and remaining cinnamon. Remove peel from top of each apple. Pour apple juice mixture into a 2-quart baking dish. Place apples in apple juice mixture. Sprinkle nut mixture over apples. Bake covered at 350° for 35– 40 minutes.
