Cheesecake Filling:
Combine cream cheese, sugar, egg, and vanilla in a small bowl with an electric mixer until light. Pour into one unbaked pie crust. (At this point, you can put it in a gallon freezer bag and freeze to make later.)
Apple Filling:
Combine sugar, cornstarch, cinnamon, and salt in a large saucepan. Add apples, apple juice, and butter. Place on medium heat. Bring to a boil. Reduce heat. Cover and simmer for 2 minutes. Spoon over Cheesecake Filling.
Roll dough for top crust. Lift onto filled pie. Trim 1/2 inch beyond edge of pie plate. Fold under the bottom crust and flute. Decorate with pastry scraps and cut vents in crust. Bake at 400° for 40 minutes or until nicely browned.
