Combine sugar, salt, one cup of water and butter. Heat until sugar is dissolved. Blend cornstarch with 1/2 cup of cold water and add slowly to the hot mixture. Cook on low heat until clear, about 8 minutes. Beat egg yolks and add slowly; cook 3 minutes, stirring continually. Remove from heat and add lemon juice and rind. Cool. Pour in a baked pie shell. Set aside.
Meringue:
Beat egg whites until foamy; add salt and cream of tartar. Continue beating and add sugar gradually until stiff peaks form. Pile on the lemon filling, sealing edges. Brown in a 375° oven for 10–15 minutes.
Fun Fact: The Crazy Horse Memorial is a mountain monument in the Black Hills of South Dakota in the form of Crazy Horse, an Oglala Lakota warrior, riding a horse and pointing into the distance. The mountain carving was begun in 1948 by sculptor Korczak Ziolkowski, who had worked on Mt. Rushmore under Gutzon Borglum. Ziolkowski was invited to the Black Hills by Lakota Chief Henry Standing Bear, whose invitation read: “My fellow chiefs and I would like the white man to know the red man has great heroes, too.” It is not a federal or state project, but a nonprofit educational and cultural undertaking now carried on by Ziolkowski’s family and financed primarily from admission fees. Ziolkowski was offered $10 million from the federal government on two occasions, but he turned the offers down, fearing that his plans for the memorial would be left behind. The monument is being carved out of Thunderhead Mountain on land considered sacred by some Native Americans, between Custer and Hill City, roughly 8 miles away from Mount Rushmore.
