Frosted Carrot Bars

Ingredients

4 eggs
2 cups sugar
2 cups flour, sifted
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
1 1/2 cups oils
3 cups grated carrots
1 1/2 cups grated coconut
1 1/2 cups walnuts, chopped

Cream Cheese Frosting:
1 (3-ounce) package cream cheese, softened
1 tablespoon light cream
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
1/8 teaspoon salt

Directions:

Beat eggs until light. Gradually add sugar. Sift flour, baking powder, cinnamon, and salt. Add flour mixture alternately with oil. Fold in carrots, coconut, and walnuts. Spread in 2 greased 13x9x2-inch pans. Bake at 350° for 25–30 minutes. Cool and frost.

For Cream Cheese Frosting:
Blend together cream cheese and cream. Add the sugar and more cream, if necessary, to make frosting spreadable. Add vanilla and salt and beat well.
