1. Trim fat from chicken. Cut chicken into 1-inch pieces.
2. Spray 10-inch nonstick skillet with cooking spray. Heat over medium heat. Cook chicken in skillet about 5 minutes, stirring occasionally, until no longer pink in center.
3. Stir in remaining ingredients. Heat to boiling reduce heat. Cover and simmer 15 minutes, stirring occasionally. Uncover and simmer about 3 minutes longer, stirring occasionally, until carrots are tender.
