Serves: 4
1. Heat oven to 400°.
2. Cut four 12-inch circles of cooking parchment paper or aluminum foil. Cut fish into 4 serving pieces. Place each piece of fish on half of each parchment circle. Sprinkle fish with oregano, salt and pepper. Layer onion, tomato, zucchini and olives on fish.
3. Fold other half of circle over fish and vegetables. Beginning at one end, seal edge by turning up and folding tightly 2 or 3 times. Twist each end several times to secure. Place on ungreased cookie sheet.
4. Bake 20 to 25 minutes or until vegetables are crisp-tender and fish flakes easily with fork. To serve, cut a large X in top of each packet carefully fold back points to avoid the steam that is released.
