For Meatloaf:
Mix all ingredients except gravy together in a medium bowl. Spoon into a lightly greased 2-quart casserole dish. Add half the gravy; refrigerate remaining gravy for second meal. Bake meatloaf at 350 degrees for 20 minutes. Serve half of meatloaf; reserve half for second recipe.
For Shepherd's Pie:
Crumble reserved meatloaf into a lightly greased 2-quart casserole dish. Top with reserved gravy, layer on a drained 15-ounce can of corn; spread one cup mashed potatoes to cover all. Sprinkle with shredded Cheddar cheese to taste, about one cup. Bake, uncovered, at 350 degrees for 20 minutes.
Small brown paper sacks chock-full of wrapped candies are thoughtful giveaways to hand out as sweet “glad-you-stopped-by” gifts.
