Sausage & Veggie Bake

Ingredients

1 to 2 tablespoon oil
1 cup celery, chopped
1/2 cup green pepper, chopped
1/2 cup onion, chopped
2 cups water
1 (2.1 ounce) chicken noodle soup mix
3/4 cup instant rice, uncooked
1 pound ground pork sausage, cooked, drained and crumbled
Optional: 1 (4 ounce) can sliced mushrooms, drained

Directions:

Heat oil in a small skillet over medium heat. Cook celery, green pepper and onion for 5 minutes; set aside. Bring water to boil in a medium saucepan. Add soup mix, cover and simmer for 5 minutes. Stir in rice and remove from heat. Cover; let stand 5 minutes. In a greased 13"x9" baking pan, mix together sausage and rice mixture. Stir in vegetable mixture and mushrooms, if using. Bake, uncovered at 350 degrees for 20 minutes, or until heated through.
