Crispy Fried Okra

Serves: 4
Total Calories: 140

Ingredients

1 pound fresh okra, stemmed, cut into 1/2-inch slices, or 1 (10-ounce) package frozen cut okra, thawed and dried
1 or 2 egg white, slightly beaten
1/2 heaping cup white cornmeal
1/2 teaspoon onion powder
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground pepper, or to taste
1 corn oil

Directions:

Add okra slices to egg whites and toss until well coated. Combine cornmeal, onion powder, salt, and pepper in a plastic bag. Add okra slices a handful at a time to the cornmeal mixture, shaking until thoroughly coated. Remove from bag and place on a baking sheet. Okra can be refrigerated at this point. Heat oil and fry a small batch of okra at a time. If too much is added at one time, okra will smother rather than fry. Remove from oil, drain on a paper towel, and place in a warm oven until all okra is prepared. Serve immediately.
