Fill a large pot with about 1–2 inches of water. Add bacon drippings or oil. Add garlic and onions. Bring this to a slow boil and simmer. Add green beans, bay leaf, salt and pepper. Bring to another slow simmer. Simmer until green beans glisten with the oil, and seasonings have married. Garnish with sprinklings of crushed red pepper flakes or paprika, and serve with freshly made corn muffins.
