Can’t Beat These Meatballs


Serves: 12

Ingredients

Meatballs:
3/4 pound ground beef
3/4 pound ground pork
1/3 cup plain bread crumbs
1/3 cup finely chopped red bell pepper
3/4 teaspoon garlic powder
1 salt and pepper to taste
1 egg, slightly beaten

Sauce:
2/3 cup apple juice
1 cup jalapeño jelly
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
2 tablespoons cornstarch
1 teaspoon salt

Directions:

Meatballs:
Combine all ingredients until well blended. Shape into 1 1/2-inch meatballs. Place in greased pan and bake at 375° for 30 minutes or till browned and thoroughly cooked.

Sauce:
Mix ingredients well. Cook in large skillet over medium heat 2–3 minutes or until thickened, stirring constantly. Add Meatballs and stir to coat. Cook and stir over medium heat 5–7 minutes or until thoroughly heated. Transfer to chafing dish or crockpot to keep warm.

Fun Fact: Instead of toothpicks, spear soft hors d'oeuvres—like meatballs—with pretzel sticks. Guests may enjoy eating the stick as well.
