Brown meat and onion; add taco seasoning. Cut 1/4 inch off top of chip bags; squeeze bags to crush chips slightly. Fill bags with cooked meat mixture. Top with cheese, lettuce, tomatoes, sour cream, and olives offered on paper plates. Stick fork in bag and serve. Offer taco sauce.
Editor's Extra: Let guests start the bag with meat, then whichever lined-up remaining ingredients they desire. Stick a plastic fork in the bag. Easy cleanup.
Fun Fact: Sometimes chips lose their crispness after being opened a while. Revive them by putting a small amount on a paper plate and microwaving about 30 seconds. This works with crackers as well. It may not be quite the same as freshly opened chips, but what have you got to lose?
