Combine ginger, garlic, lime zest, juice, and salt and pepper in a bowl with a lid. Add shrimp, toss to coat, and cover. Refrigerate for 10 minutes. Preheat broiler. Thread a shrimp lengthwise onto end of each skewer. Place kabobs on broiler pan and broil 1 minute on each side, until cooked through. Serve with chili sauce for dipping.
Fun Fact: Limes, as well as lemons, are wonderful to keep on hand . . . for drinks, for zests, for cleaning, for getting fish smell off your hands, and getting rid of odors, too. But did you know they might make a throbbing headache go away? Worth a try. Slice a lime in half and rub it on your forehead. Close your eyes and feel the throbbing slip away.
