Put frozen meatballs in large skillet or pot, and cook, covered, on medium heat 10–15 minutes till heated. Remove to bowl and wipe skillet clean. Now add oil, cheese, chiles, taco seasoning mix, and water. Over low heat, stir till melted. Add meatballs; simmer; cover, stirring occasionally, till all is heated. Keep warm in crockpot or chafing dish.
Fun Fact: Cheese can burn easily if you’re in too much of a hurry. Melt it on low heat and stir a lot. It helps to cut cheese as small as you can, as the more edges exposed to the heat, the quicker it will melt.
