Combine tomatoes, tomato paste, rice, water, salt and pepper in a medium saucepan; set aside. Heat reserved drippings in a large skillet over medium heat. Add onion and green pepper; cook for one minute. Stir vegetables into tomato mixture; cover. Bring to a boil; reduce heat and simmer for 25 to 35 minutes, until rice is tender. Stir in crumbled bacon.
Tip: Tomato paste adds rich flavor to casseroles and stews. Since many recipes only call for a tablespoon or two, save the rest by spooning it into ice cube trays to freeze.
