Preheat oven to 425°. In mixing bowl combine flour, milk, and eggs. Beat lightly. The batter will be slightly lumpy. Put butter into a 12-inch round frying pan with heatproof handle. Place in oven until very hot. Pour in the batter, return to oven, and bake 20 minutes or until pancake is puffed all around sides of the pan and golden brown. Remove from oven and sprinkle with confectioners’ sugar and lemon juice. Serve immediately.
Editor's Extra: We baked half of this in a small iron skillet for the cover photo shoot. It “popped” before we could get its picture made. But it surely was delicious!
