Have eggs and milk at room temperature. Mix all ingredients in bowl together and beat hard for 2 minutes. Grease 11–12 cups of muffin tin with vegetable shortening or lard. Pour batter from pitcher, filling each cup 1/2–3/4 full. Place in cold oven and set temperature for 450°. Bake for 25 minutes. Expect them to fall when removed, for that is the nature of popovers. Butter heavily (with the real dairy product) and serve.
