1. Combine egg substitute, cottage cheese, milk, oregano, garlic powder, salt and pepper.
2. Squeeze excess moisture out of spinach. Stir spinach, cheese, patties, and onion into egg mixture. Pour into 13x9x2-inch baking dish coated with vegetable cooking spray. Bake at 325°F for 35 to 40 minutes or until set. Let stand 10 minutes before serving.
3. Cut into squares to serve. Garnish with cherry tomatoes and parsley, if desired.
HELPFUL HINGS: Be sure to thoroughly drain the spinach before adding it to the casserole. Place the thawed spinach in a colander and press on it with the back of a spoon to remove all excess moisture.
