1. Combine all ingredients in large mixing bowl and beat until smooth. Coat heated griddle or non-stick skillet with cooking spray.
2. Pour batter onto heated griddle. Turn pancakes as soon as they are puffed and large bubbles appear. Serve with sweetened fruit or syrup, if desired.
