Sauté onions and celery in butter until onions are clear. Put bread crumbs in a large bowl and sprinkle with salt, sage, and thyme. Mix in sautéed vegetables and chicken broth. Mix together and stuff into the pork chops. Place stuffed chops into a well-greased 12-inch Dutch oven.
Mix the soup, water, mushrooms, and garlic in a bowl and pour over pork; cover with lid. Put the Dutch oven on hot coals and place more coals on the lid. Bake 90 minutes, turning a quarter turn every 20 minutes. (Or bake in conventional oven at 350° for 20 - 30 minutes.)
Fun Fact: Red Mountain is a set of three peaks in the San Juan Mountains of western Colorado, about five miles south of Ouray, Colorado. The mountain gets its name from the reddish iron ore rocks that cover the surface. In the fall of 1968 the film True Grit was filmed in Ouray County, including some scenes in the city of Ouray and the nearby town of Ridgway and, most notably, the interior of the Ouray County Court House.
