Place fillets on baking pan, and drizzle with lemon juice, wine, and 1/2 the butter. Sprinkle with salt and pepper to taste. Bake at 350° for 20 minutes, or until fish flake easily with a fork; remove from oven. Turn heat to broil. Sprinkle fish with bread crumbs, and drizzle with remaining 1/4 cup butter. Broil for just a few minutes, watching closely so it doesn’t burn, until fish is lightly browned.
