Preheat oven to 400°. Cut each potato lengthwise into 8 wedges. Put Italian dressing in large bowl with potatoes, and toss to coat. Arrange cut sides down around outer edges of greased jellyroll pan. Bake 20 minutes. Meanwhile, reserve 1/4 cup coating mix, and set aside. Put remaining coating mix in shallow bowl. Spread each fish fillet on both sides with salad dressing, then coat with coating mix, pressing gently so coating will adhere. Remove potatoes from oven; turn over. Place fish in center of baking sheet. Sprinkle reserved 1/4 cup coating mix evenly over potatoes. Bake 15 minutes or until fish flake easily with fork.
