Preheat oven to 400°. Wash salmon fillets and pat dry. Line a jellyroll pan with foil. Place fillets on foil, skin side down. Spread top and sides of each fillet with about 2 teaspoons mustard. Top mustard with a layer of bread crumbs and sprinkle with lemon pepper. Add salt to taste. Drizzle butter over top. Bake about 15 minutes, or until fish flake easily when tested with a fork. May add a little pepper, if desired.
