Separate one egg set egg white aside. In a medium mixing bowl, beat the yolk and remaining eggs until combined blend in sugar, salt and vanilla. Stir in milk. Beat reserved egg white until soft peaks form fold into custard mixture. Pour into pie crust. Bake at 350 degrees for 35 to 45 minutes. Cool and sprinkle with nutmeg. Keep refrigerated until ready to serve.
