Almond Rice Pudding |

Print this Recipe
1/2 cup white rice, uncooked
2 cups milk
1 envelope gelatin unflavored
1/4 cup water cold
1/4 cup almonds blanched and chopped
1 teaspoon vanilla extract
5 tablespoons sugar
1/8 teaspoon salt
2 cups whipped cream whipped
Bring milk to a boil. Add rice and reduce heat. Simmer, covered, till done, about 20 to 25 minutes. Dissolve gelatin in water. Stir into rice the gelatin, chopped almonds, vanilla, sugar, and salt. Cool slightly. Fold in whipped cream. Pour into bowl. Refrigerate. If desired, serve with cold fruit sauce, such as cherry sauce or Danish Dessert made according to package directions.
